  1. In a large bowl, dissolve 1/2 cup of the salt in the warm water. Set aside to cool.

  3. Immerse the cabbage in the cooled salted water in a large bowl, adding enough cold water to cover the cabbage. Weigh down the cabbage with a plate to keep it fully immersed. Leave at room temperature for 6–8 hours, turning the wedges halfway through.

  4. Rinse the cabbage wedges well under cold running water and gently squeeze out any excess moisture. Leave them to drain, cut-side down in a colander for at least 30 minutes.

  5. In a small saucepan, combine the onions, mushrooms, anchovies, spring onions, crushed garlic cloves, and seaweed. Bring to a boil, then simmer for 20 minutes. Strain the liquid, discard the solids, and let the stock cool.

  6. When the stock has cooled, combine the remaining garlic cloves, chili flakes, fish sauce, salted shrimp, sugar, and ginger in a food processor. Blitz until smooth.

  7. Gradually add the stock (around 2 cups) to make a smooth paste. Stir the paste into a bowl along with the carrots, spring onions, and radish.

  8. Coat the cabbage wedges with the spice paste, ensuring to get between each leaf. Tuck the outer leaf of each wedge over the rest, forming a parcel. Place the wedges into a non-reactive container with a tight-fitting lid.

  9. Cover the kimchi with cling film, then the container lid. Leave at room temperature until the kimchi starts to ferment, around 2–3 days.

  10. After this initial fermentation, store and continue to ferment the kimchi in the fridge. It can be eaten after 2 weeks or based on your preference. Cut the kimchi before serving.
